Is it possible to get everything in text that caller speaks into a variable without specifying any grammar?

Hi,
There's no way to do live transcription into a variable, no. Generally to gather open ended input a recording would be made of the caller speaking and then that recording could be transcribed or used afterward, but otherwise you would need a grammar to match what the caller is speaking to set a value based on their input. You can, however, set variables associated with phrases in your grammar, such that additional data can be associated with a single grammar match.
